Oven-Baked Salmon Bites with Lemon & Garlic

Sometimes the simplest recipes are the most satisfying. These oven-baked salmon bites with lemon and garlic are quick, healthy, and full of fresh flavor. Ready in under 30 minutes, the salmon turns golden on the outside and stays tender inside. They’re perfect on their own or served with a simple side salad, rice, or mashed potatoes for a complete meal.

Ingredients


  • 400–500 g salmon fillet, skin removed and cut into bite-sized cubes

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 2 garlic cloves, minced

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper


Instructions


Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.


In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the salmon cubes and toss gently until evenly coated.


Arrange the salmon pieces on the prepared tray in a single layer. Bake for 12–15 minutes, or until the salmon is golden on the edges and flakes easily with a fork.


Serve warm as an appetizer, or add to salads, rice, or pasta for a quick meal.
