This oven baked salmon with dill, lemon, and garlic is light, juicy, and full of bright flavor. It’s a quick, healthy dinner that always feels a little special. I love pairing it with roasted or mashed potatoes for a cozy, balanced meal.

Ingredients
500 g salmon fillets
2 tablespoons olive oil
1 teaspoon Dijon mustard
Juice of half a lemon
1 tablespoon fresh dill, finely chopped
1 clove garlic, minced
Salt and black pepper to taste
Lemon slices for baking
Instructions
Preheat oven to 200°C (180°C fan).
Line a baking dish with parchment paper or lightly brush with olive oil.
Pat the salmon dry and place it skin side down.
In a small bowl, whisk together olive oil, Dijon mustard, lemon juice, chopped dill, garlic, salt, and pepper.
Spoon the mixture over the salmon and rub evenly onto each fillet.
Top with lemon slices.
Bake for 14–16 minutes, depending on thickness, until the salmon flakes easily but stays juicy.
Let it rest a few minutes before serving.
Serve with roasted or mashed potatoes, rice, or a simple green salad.
