Turkish Zucchini Fritters: Mücver

Crispy on the outside and soft on the inside, Mücver is a delightful Turkish zucchini fritter. Quick and easy to make, these fritters are packed with fresh herbs and feta. They make a great appetizer, side dish, or a light meal when served with yogurt. With a preparation time of just 30 minutes, they're the perfect addition to any table.

Ingredients


  • 2 medium zucchinis, grated

  • 1 teaspoon salt (to draw out moisture)

  • 2 eggs

  • 3 tablespoons all-purpose flour

  • 125g feta cheese, crumbled

  • 3 tablespoons chopped fresh dill

  • 2 tablespoons chopped fresh parsley

  • 2 spring onions, finely chopped

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon red pepper flakes (optional)

  • 1/2 teaspoon baking powder

  • Vegetable oil for frying


Instructions


Prepare the zucchini

Place the grated zucchini in a bowl, sprinkle with salt, and let it sit for about 15 minutes. Squeeze out as much liquid as possible. This step is key for crisp fritters.


Make the batter

In a large bowl, combine the drained zucchini with the eggs, flour, feta, dill, parsley, spring onions, black pepper, red pepper flakes, and baking powder. Mix gently until everything is evenly combined.


Fry

Heat a shallow layer of oil in a pan over medium heat. Drop spoonfuls of the mixture into the hot oil and gently flatten them. Fry for 3–4 minutes per side, until golden and crisp. Transfer to a paper towel to absorb excess oil.


Serve

Serve mücver warm, with plain yogurt or yogurt mixed with a little dried mint.They also pair well with a simple salad and make a great addition to a mezze table.
