Herby Garlic Mustard Potato Salad

This is the potato salad I make on repeat. It’s fresh and bright with plenty of herbs, lightly creamy from a touch of mayo, and has the perfect tang from lemon and Dijon mustard. It’s the kind of side dish that fits everywhere — whether it’s burgers on a weeknight, a BBQ with friends, or packed up for a picnic.
I love how easy it is too. While the potatoes gently simmer, you can whisk up the dressing, and by the time they’re cool enough to handle, everything comes together in one bowl. It’s even better if you make it a little ahead and let the flavors meld in the fridge.

Ingredients
6 to 7 medium potatoes (about 1 kg), peeled and cut into cubes
3 tablespoons olive oil
2 to 3 tablespoons mayonnaise
Juice of 1 lemon
1 teaspoon Dijon mustard
2 garlic cloves, minced
Salt and freshly ground black pepper, to taste
A handful of fresh dill, chopped
A handful of fresh parsley, chopped
2 spring onions, sliced
Instructions
Place the potatoes in a large pot and cover with cold salted water. Put a lid on the pot and bring to a boil. Once boiling, remove the lid or leave it slightly ajar to prevent the water from bubbling over. Reduce to a gentle boil and cook the potatoes until fork-tender, about 12–15 minutes. Drain and let cool slightly.
In a small bowl, whisk together the olive oil, mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
Add the slightly cooled potatoes to a large mixing bowl. Sprinkle in the chopped dill, parsley, and spring onions. Pour the dressing over and gently toss until everything is evenly coated.
Taste and adjust the seasoning if needed. Cover and refrigerate the salad for 30 minutes before serving to let the flavors develop.
Tips
Potato type: Waxy potatoes like Yukon Gold, Charlotte, or baby potatoes hold their shape best.
Make ahead: The salad tastes even better the next day.
Serving suggestion: It pairs perfectly with burgers, grilled chicken, or fish, and makes a great addition to any picnic or BBQ spread.
