Easy and Juicy Homemade Cheeseburgers

Homemade cheeseburgers don’t need to be complicated to be amazing. With juicy beef patties, melted cheddar, and a few simple tricks, this recipe brings all the comfort of a classic burger to your kitchen.
Whether you stack them high or keep them classic, these burgers are guaranteed to satisfy.

Ingredients
500g ground beef (20% fat if possible)
1 small onion, finely grated with its juices
2 teaspoons soy sauce
½ teaspoon apple cider vinegar (or natural vinegar – just a splash)
1 teaspoon garlic powder
Salt and black pepper, to taste
4–6 cheddar slices (1 per patty)
Burger buns (store-bought)
Optional toppings: lettuce, tomato, pickles, ketchup, mayo, mustard
1 teaspoon neutral oil (only if beef is lean)
Instructions
Season the beef
In a large bowl, combine the minced beef with grated onion (and all its juices), soy sauce, apple cider vinegar, garlic powder, salt, and pepper. Mix gently until everything is just combined. Avoid overmixing to keep the patties tender.
Shape the patties
Divide the mixture based on how you plan to serve:
6 thin patties (~80g each) for double-stacked burgers
4 medium patties (~125g each) for single burgers
Shape into flat discs slightly wider than your buns.
Cook the patties
Heat a skillet, griddle, or grill pan over medium-high heat until very hot. If needed, add 1 teaspoon of oil. Place the patties in the pan and cook:
Thin patties: about 1.5–2 minutes per side
Medium patties: about 2.5–3 minutes per side
Place a slice of cheddar on each patty during the last 30 seconds of cooking and cover with a lid to help it melt.
Toast the buns & assemble
While the patties rest briefly, toast the cut sides of the buns in the same pan until golden.
Spread your favorite sauces, layer with lettuce, tomato, pickles, and stack your patties. Finish with the top bun and serve immediately.
