Freezer-Friendly Meatballs – Easy Meal Prep for Busy Days

Being a working mom means planning ahead wherever I can—and these freezer-friendly meatballs are one of my favourite ways to stay prepared. These homemade köfte (Turkish meatballs) are full of flavour and completely free from additives. I make a large batch, freeze them raw, and just defrost what I need.
It’s quick, practical, and so much better than anything store-bought. Perfect for busy evenings or whenever you need a comforting homemade meal in minutes.
Ingredients
1 kg ground beef (preferably with some fat)
1 onion, grated
1–2 garlic cloves, finely grated or minced
1 egg
1/2 cup breadcrumbs
1 teaspoon dried thyme
1.5 teaspoons salt
Black pepper to taste
1/2 teaspoon cumin
Optional: handful of fresh parsley, finely chopped
Optional: 2–3 tablespoons milk (for a softer texture)
Optional: chili flakes for heat

Instructions
In a large bowl, mix the grated onion, garlic, egg, breadcrumbs, parsley, thyme, cumin, salt, pepper, and optional milk. Add the ground beef and knead the mixture well until it’s sticky and fully combined.
Shape into small round köfte and place them on a tray lined with baking paper. Freeze for 1–2 hours until solid, then transfer to a freezer-safe bag or container.
To cook: Defrost in the fridge for several hours or overnight. Then pan-fry, grill, or bake until golden and cooked through.
