Healthy Caesar Salad with Yoghurt Dressing and Homemade Croutons

This version of Caesar Salad is lighter and more everyday-friendly, made without raw eggs or Worcestershire sauce, and with ingredients that are easy to find. The dressing is creamy thanks to Greek yogurt, balanced with lemon, Parmesan, and a small splash of soy sauce for depth. It keeps that familiar Caesar character without feeling heavy. Add crisp romaine and homemade croutons, and you have a salad that works just as well on its own as it does next to grilled chicken, fish, or a simple pasta.

Ingredients
For the Salad:
1 large head of Romaine lettuce, washed and torn into pieces
Homemade croutons (recipe below)
1/3 cup grated Parmesan cheese
For the Dressing:
8 tablespoons Greek yogurt
2 tablespoons mayonnaise
1 clove garlic, grated
Juice of half a lemon
2 tablespoons olive oil
1 teaspoon soy sauce
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Homemade Croutons:
2 slices of bread, cut into cubes
Salt, pepper, and dried thyme (to taste)
Drizzle of olive oil
Instructions
Make the croutons
Preheat the oven to 180°C. Toss the bread cubes with olive oil, salt, pepper, and thyme. Spread them on a baking tray in a single layer. Bake for 5–8 minutes, turning once, until golden and crisp. Set aside to cool.
Prepare the salad
Wash and dry the romaine lettuce well, then tear into bite-sized pieces.
Make the dressing
In a bowl, whisk together Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, soy sauce, Parmesan, salt, and black pepper until smooth and creamy. Taste and adjust seasoning if needed.
Assemble
Place the lettuce in a large bowl, add the dressing, and toss gently until evenly coated. Top with homemade croutons and extra Parmesan. Serve immediately.
