Fresh, crisp, and packed with flavor—this is the healthiest and most refreshing Caesar salad you’ll ever try! Made without raw eggs or Worcestershire sauce, this lighter version retains all the creamy, tangy goodness you crave. A hint of soy sauce adds the perfect umami boost, making it even more delicious than the classic. Plus, it comes together in just 15 minutes with easily accessible ingredients!

Ingredients
For the Salad:
1 large head of Romaine lettuce, washed and torn into pieces
Homemade croutons (recipe below)
1/3 cup grated Parmesan cheese
For the Dressing:
8 tablespoons Greek yogurt
2 tablespoons mayonnaise
1 clove garlic, grated
Juice of half a lemon
2 tablespoons olive oil
1 teaspoon soy sauce
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Homemade Croutons:
2 slices of bread, cut into cubes
Salt, pepper, and dried thyme (to taste)
Drizzle of olive oil
Instructions
Making the Croutons
Begin by preheating your oven to 180°C (350°F). While it warms up, toss the bread cubes with olive oil, salt, pepper, and thyme in a mixing bowl. Spread the seasoned cubes on a baking sheet in a single layer.
Bake for about 5-8 minutes or until golden and crisp, turning them halfway through to ensure even crisping. A perfect crouton should be crunchy on the outside yet slightly chewy inside.
Preparing the Lettuce
While your croutons bake, wash and dry the Romaine lettuce thoroughly. Tear it into bite-sized pieces to make mixing it with the dressing easier and more enjoyable.
Whisking the Dressing
In a separate bowl, whisk together the Greek yogurt, mayonnaise, grated garlic, lemon juice, olive oil, soy sauce, Parmesan cheese, salt, and black pepper until smooth and creamy. This flavor-packed dressing brings the essence of a traditional Caesar alive without the excess calories—saving around 30% compared to traditional versions.
Bringing It All Together
Once the croutons are done and the dressing is ready, it’s time to assemble your salad. In a large mixing bowl, toss the torn Romaine with the dressing until every leaf is thoroughly coated. Add the homemade croutons and sprinkle extra Parmesan on top to enhance flavor and richness. Serve immediately to enjoy the best texture and taste.
