Baked Feta Pasta

We all know how crazy busy life can get, especially as a mom juggling a million things at once. So when it’s one of those days (you know the kind), the last thing you need is a complicated dinner. Enter this baked feta pasta – creamy, comforting, and with just the right amount of fancy without any of the fuss.
It’s the perfect quick meal to put together, and I promise you, it tastes like you’ve spent hours in the kitchen. Ready to impress the family with minimal effort? Let’s go!

Ingredients
125g feta cheese
250g cherry tomatoes
3 tbsp olive oil
1/2 tsp dried oregano or thyme
Salt and pepper to taste
200g pasta (fusilli is my go-to for its perfect sauce-holding shape, but linguine works wonderfully too)
1/2 cup starchy pasta water (adjust to get your perfect sauce consistency)
Instructions
Preheat your oven to 200°C (390°F).
Place the feta block in the center of a baking dish and surround it with the cherry tomatoes. Drizzle the olive oil over the top, sprinkle with oregano or thyme, and season generously with salt and pepper.
Pop it into the oven and bake for 20-25 minutes until the tomatoes burst open and the feta turns golden and gooey.
While the feta and tomatoes are baking, cook your pasta to perfection!
When the feta and tomatoes are ready, take them out of the oven and use a fork to smash them all together, creating a creamy, luscious sauce.
Add your cooked pasta to the dish, along with a splash of the starchy pasta water to loosen the sauce (add more if you like it extra saucy). Toss it all together and garnish with fresh herbs if you feel like going the extra mile.
