Grilled Chicken Burger

If you’re craving a chicken burger but don’t want to fry or bread anything, this is the version I make. It’s a lighter alternative to crispy chicken burgers, with the same comfort and none of the hassle. Thin, pounded chicken breast cooks quickly, stays juicy, and works perfectly in a soft sesame bun.
This is something you can genuinely pull together in about twenty minutes, which makes it ideal for lunch or an easy weeknight dinner. Simple seasoning, straightforward cooking, and toppings you probably already have at home.

Ingredients
For the chicken
Chicken breast, thinned and lightly pounded
Salt
Black pepper
Olive oil
For serving
Sesame burger buns
Fresh tomatoes, sliced
Pickles
Lettuce or mixed greens
Cheese slices
Mustard, mayonnaise, or ketchup
Instructions
Preparing the chicken
Lightly pound the chicken breast until it’s an even thickness. Season both sides with salt and black pepper, then drizzle lightly with olive oil.
Heat a pan or grill pan over medium heat. Add the chicken and cook until golden on both sides and fully cooked through. Because the chicken is thin, this only takes a few minutes per side. The chicken should feel firm but still juicy.
If using cheese, place a slice on top of the chicken about one minute before it’s ready. Cover the pan with a lid and let the cheese melt slightly.
Assembling the burger
Place the grilled chicken on the bottom half of a sesame bun. Add sliced tomato, pickles, and lettuce if using. Finish with mustard, mayonnaise, or ketchup as desired, then close with the top bun.
Serve immediately while everything is warm.
