Spinach and Goat Cheese Frittata

Ingredients


  • 4 eggs

  • 2 tablespoons milk

  • 1 small onion, thinly sliced

  • 1 handful fresh spinach (around 50-60g)

  • 40g goat cheese

  • 1 tablespoon butter

  • Salt

  • Black pepper

  • Optional: chili flakes or fresh herbs


Instructions


Preheat your oven to 180°C.


Melt the butter in an oven-safe pan and gently sauté the onion until soft and golden. Add spinach and cook until wilted. Season with salt and pepper.


In a bowl, whisk the eggs with milk, a pinch of salt, and pepper. Pour the egg mixture over the spinach and onion in the pan.


Dot the top with goat cheese and transfer to the oven. Bake for 10–15 minutes or until the frittata is just set and golden on top.


Let it rest for a couple of minutes before serving.
