Egg-Dipped Grilled Cheese Toast

This sandwich is everything I love in one bite: crispy on the outside, cheesy in the middle, and full of herby flavor. It’s my twist on the classic grilled cheese—with the bread soaked in a savory egg mixture before toasting. Think of it like a French toast meets grilled cheese situation, and it’s perfect for breakfast, lunch, or a cozy snack.


What I especially love about this version is how the eggs coat the bread, giving it a golden crust and a little extra richness. The cheese melts into the middle, and a sprinkle of thyme gives it that warm, comforting flavor that makes this simple sandwich feel just a bit more special.


Use any cheese you like—I go for mozzarella and parmesan, but gouda, cheddar, or Turkish kaşar all work beautifully. And don’t skip the lid while toasting: it helps the cheese melt perfectly while the outside gets that ideal crunch.

Ingredients

For two sandwiches:

  • 4 slices of bread

  • 2 eggs

  • 1–2 teaspoons milk

  • Splash of olive oil

  • Grated mozzarella and parmesan (or any cheese of choice)

  • Salt

  • Pepper

  • Dried thyme

  • 1 teaspoon butter (to pan-toast with the lid on)


Instructions

Whisk the eggs with milk, olive oil, salt, pepper, and thyme.


Dip each slice of bread into the egg mixture, coating both sides well.


On two slices, layer grated cheese, then top with the other slices to make sandwiches.


Heat a pan with butter. Place the sandwiches in, cover with a lid, and toast on low-medium heat until golden on both sides and the cheese has melted.


Slice and serve warm.
