One-Pan Creamy Chicken and Mushrooms

Some nights call for a comforting meal that doesn’t leave you with a pile of dishes. This one-pan creamy chicken and mushroom recipe is exactly that. Tender chicken and earthy mushrooms simmer together in a garlicky cream sauce until everything is rich, cozy, and full of flavor. With just one pan and a handful of ingredients, you get a meal that feels indulgent yet easy enough for any weeknight. Serve it with rice, pasta, or bread to soak up every bit of the sauce.

Ingredients


  • 600–700 g chicken thighs

  • 250 g mushrooms, sliced

  • 250 ml cooking cream

  • 1 small onion, finely chopped (optional)

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil or butter

  • Salt and black pepper to taste

  • A pinch of paprika or dried thyme (optional)


Instructions


Heat olive oil or butter in a large pan. Season the chicken with salt and pepper, then sear on both sides until golden. Remove to a plate.


In the same pan, sauté the onion until soft. Add the garlic and mushrooms, cooking until they release their juices and take on a little color.


Return the chicken to the pan. Pour in 250 ml cooking cream and stir to combine with the mushroom juices.


Keep the lid off once the cream is in. Let it simmer gently for 10–15 minutes, stirring occasionally, so the sauce reduces and thickens naturally while the chicken finishes cooking.


Taste and adjust seasoning. Sprinkle with paprika or thyme if you like.


Serve warm with rice, pasta, or bread.
