Garlicky Parmesan Chicken Thighs

This chicken is a family favorite in our house — the kind of meal that ends up on repeat every week. The thighs stay juicy in the oven, while the garlicky breadcrumb and Parmesan topping bakes into a golden crust. I change up the sides depending on the night, but the chicken always disappears first.

Ingredients
6 boneless, skinless chicken thighs
2 tablespoons olive oil
2 garlic cloves, minced
1 cup breadcrumbs
½ cup grated Parmesan cheese
A handful of fresh parsley, finely chopped
Salt and black pepper
Instructions
Preheat the oven to 200°C and line a baking tray with parchment paper.
Pat the chicken thighs dry and season both sides with salt and black pepper.
In a small bowl, mix olive oil and garlic. Brush over the chicken.
In another bowl, combine breadcrumbs, Parmesan, and parsley. Press this mixture firmly onto the chicken until coated.
Place the chicken on the tray and bake for 25–30 minutes, until the coating is golden and the chicken is cooked through.
Serve warm with your favorite sides.
