Easy Turkish Braised Green Beans

“Zeytinyağlı taze fasulye” is one of those dishes that instantly transports me to a Turkish summer afternoon—windows open, breeze flowing, and the smell of olive oil and tomatoes gently simmering in the kitchen. This beloved classic is a staple in Turkish homes, especially during spring and summer when fresh green beans are at their peak.


What makes this dish so comforting is its simplicity. Just a few pantry ingredients—olive oil, onion, tomato, and green beans—come together with patience and love to create something deeply flavorful. It’s naturally vegan, light yet satisfying, and traditionally served cold or at room temperature. With a wedge of lemon and a piece of crusty bread, it becomes the kind of meal that nourishes both body and soul.


This was a recipe I grew up with, and every time I make it, I’m reminded of my mother’s kitchen and the rhythm of seasonal home cooking. If you’ve never tried a Turkish zeytinyağlı (olive oil–braised dish) before, this is a beautiful place to start.

Ingredients


  • 500 g green beans

  • 1 medium onion, grated or thinly sliced

  • 2 cloves garlic, optional

  • 3 tablespoons olive oil

  • 2 medium tomatoes, grated or finely chopped (alternatively 400 g canned peeled tomatoes)

  • 1 teaspoon tomato paste

  • 1 teaspoon sugar

  • Salt to taste

  • Half cup hot water


Instructions


Trim the ends of the green beans and cut them in half or diagonally.


Heat olive oil in a wide pan and sauté the onions (and garlic if using) until soft.


Add tomato paste, stir for a minute, then add the grated tomatoes. Cook for 5–6 minutes.


Add green beans, sugar, salt, and hot water. Stir gently to coat.


Cover with a lid and simmer on low for about 40–45 minutes until beans are tender.


Let cool completely, then chill in the fridge. Serve cold with a drizzle of lemon juice if desired.
